Tri-tip is the Santa Maria cut: lean, beefy, and made for the grill. Grass-finished beef has a deeper flavor and a firmer texture than grain-fed, and it is naturally leaner, so cook it to medium-rare, rest it ten minutes, and slice thin across the grain.
