Maui Nui sticks are made from wild-harvested Axis deer, fermented three days and smoked over real wood, the way a meat stick was made before shortcuts. The deer are invasive on Maui, harvested at night in the field with no stress and no feedlot, and processed on a mobile USDA unit within the hour. No nitrates or nitrites added except those naturally in celery.

The Spicy stick is seasoned with Hawaiian chila pepa, a wild island chili. It starts bright and almost sweet, then builds into a lingering heat that never turns harsh.
